Wellness Wednesday - Healthy Taco Bowl
On this week's Wellness Wednesday, Char shares her recipe for a healthy taco bowl.
Ingredients:
- 1 lb ground beef or turkey
- 1 packet of low sodium taco seasoning
- 1 can black beans
- ½ yellow onion
- 2 bell peppers
- Cilantro lime rice
- Cilantro crema
Cilantro Lime Rice:
- 1 cup uncooked jasmine rice
- 2 ½ cup water
- ¼ cup chopped cilantro
- 2 tbsp lime juice
- Salt to taste
Cilantro Lime Crema:
- Blend the following in a food processor
- ½ cup plain greek yogurt
- ½ jalapeno pepper seeded
- Juice from 1 lime
- Salt to taste
Instructions:
- Add beef or turkey to a pan and break apart
- Season with half the packet of taco seasoning
- Cut up veggies and onions
- While veggies are cooking (be sure to add the other half of taco seasoning to veggies while they cook), cook the jasmine rice according to the directions on package
- Once rice is cooked add cilantro and lime
- Drain and rinse beans
- Assemble bowls with meat, black beans, cooked veggies and rice
- Dish up crema (or salsa, sour cream or plain greek yogurt) in small containers and include it with the taco bowl!
