Wellness Wednesday for April 6, 2022
This week's Wellness Wednesday looks at how to make a sweet potato, bean and quinoa casserole.
Ingredients:
- 2.5 c roasted sweet potato
- 1 c black beans rinsed
- 1 cup corn (canned or frozen)
- 1 c cooked quinoa (cooked in soup broth)
- ½ orange or yellow pepper chopped
- ½ onion chopped
- 2 garlic cloves finely minced
- ½ TBsp chili powder
- ½ TBsp cumin
- ½ tsp garlic powder
- ¼ tsp salt
- 1 avocado
Method:
- Oven roast your sweet potatoes (cut in small cubes) in the oven at 400 degrees for about 20 minutes. Stir halfway through. Cook the quinoa.
- Preheat the oven to 400 degrees.
- Saute onion, peppers until almost transparent.
- Add garlic and saute 5 minutes more.
- In a large mixing bowl, add the sweet potato, black beans, quinoa, peppeer, onion, garlic, corn and spices. Stir well to combine
- Pour in a baking dish. Cover with foil and bake for 30 minutes or until heated through. Remove foil and add cheese on top halfway through if desired.
- Add avocado to your plate and serve with a squeeze of lime.
