This week's Wellness Wednesday looks at how to make a sweet potato, bean and quinoa casserole.

Ingredients:

  • 2.5 c roasted sweet potato
  • 1 c black beans rinsed
  • 1 cup corn (canned or frozen)
  • 1 c cooked quinoa (cooked in soup broth)
  • ½ orange or yellow pepper chopped
  • ½ onion chopped
  • 2 garlic cloves finely minced
  • ½ TBsp chili powder
  • ½ TBsp cumin
  • ½ tsp garlic powder
  • ¼ tsp salt
  • 1 avocado

Method:

  • Oven roast your sweet potatoes (cut in small cubes) in the oven at 400 degrees for about 20 minutes. Stir halfway through. Cook the quinoa.
  • Preheat the oven to 400 degrees.
  • Saute onion, peppers until almost transparent.
  • Add garlic and saute 5 minutes more.
  • In a large mixing bowl, add the sweet potato, black beans, quinoa, peppeer, onion, garlic, corn and spices. Stir well to combine
  • Pour in a baking dish. Cover with foil and bake for 30 minutes or until heated through. Remove foil and add cheese on top halfway through if desired.
  • Add avocado to your plate and serve with a squeeze of lime.
