Deconstructed Salad Roll Salad in a Jar
Ingredients:
- 3 cups cooked chicken breast
I cook my chicken in the crockpot with a bit of chicken broth or water. When it’s done I shred it with a fork and divide it evenly between 5 mason jars. You could also use a rotisserie chicken from the grocery store) - 2 cups chopped Romaine lettuce
- 1 chopped bell pepper
- 1 cup chopped cucumber
- ½ cup chopped carrots
- 1 cup chopped cabbage
- ¼ cup cilantro (optional)
- 2 cups cooked rice noodles
Dressing: (you could use whatever dressing you prefer)
- Sweet Chili Sauce
- Asian peanut dressing
Instructions:
Place shredded cooked chicken evenly into 5 mason jars. Mix all of the fresh vegetables in a large bowl and divide evenly between the 5 jars. Cook the rice noodles according to their instructions, drain them and divide evenly between the jars.
